Flagship Products: HB will initially produce five flagship beers: a lager, an amber ale, an IPA, a hybrid ale and a dark ale. The dark ale will be a london porter style, a session dark ale that is deep brown and flashes ruby in the light, with a creamy tan head. The aroma is reminiscent of toasted bread and toffee. This is the result of a mix of English roasted, caramel, and pale malts that create a complex nutty fresh-baked bread malt flavor profile. This ale is moderately hoped, just enough to balance the sweetness of the malt. For an ale this dark the porter has an amazingly light body, making it an easy-to-drink full flavored porter. Mellow and smooth, the porter acquires a mocha characteristic as it warms. This ale ends with a lot of style and is at 5.2%ABV.
Our second flagship product will be a lager brwed within the parameters commonly known as a Viennna lager. Golden ruby in color with a rocky white head, this lager has a smooth malty nose with a complex malt profile that is balanced by mellow European lager hops to end in a crisp earthy ambiance. This amber lager is brewed with the finest German pilsner, roasted and caramelized malts. During the aging process the mix of malts creates a clean but smooth toasted malt flavor that is complimented by the earthy overtones from a combination of German “noble” hops. This is a fresh lager with a complex flavor yet a fresh clean finish. Squeeze in a half-slice of lime for a refreshing twist. 5.6%ABV.
Our third flagship product will be an amber ale that is a California version of the British classic Pale. Golden-amber in color with a creamy white head, this light ale is balanced with precision to create a delicate flavor profile. The mellow bready English malts mixed with light German caramel malts create a sweet background for the equally mellow combination of domestic and imported hops. The herbal stream of hop flavor and aroma creates a fresh mouth-feel to round out the smooth malt bill. The easy-going balance of hops and malt and its light body are key to the drinkablity of this well balanced session ale. 5.4%ABV.
Our fourth flagship product will be an indian pale ale that is a northwest version of the IPA. The Great North-West has long been known for its quality strong hops. This Imperial Pale Ale has a huge hop presence with a sound malt backbone. This peach colored strong ale is topped with a thick pillow-like head. The hop aroma is a heavy mix of herbal and citrus, with hits of grapefruit and fresh-cut marijuana. Large amounts of pale ale malt are used to create the alcohol strength of this ale while not adding too much malt complexity to take away from the hop focus in this staple ale. A combination of five different hops is showcased in this classic, but the warm alcohol notes in this beer are evidence of a mischievous underlying kick. 7.3%ABV.
Our fifth flagship product shall be a hybrid ale made within the parameters known as a California Red Ale. This hybrid ale is a combination of a Scottish Ale and an English Extra Special Bitter. Its body color is between amber and crimson with a thin white head that exudes a toasted malt nose with a hint of herbal aroma. Seven different malts weave in and out of the complex malt body. Although malted barley is the center of this ale, it still is brewed to have a light body making it an amazingly drinkable malty ale. Although it is heavily bittered with herbal type hops to balance big malt presence, there are no flavor hops added to this ale. The complexity between the malts still prevails, resulting in a sweet after taste with earthy and grainy overtones. 6.2%ABV
Other Products: In addition to these five flagships beers, other styles are being palnned as limited, seasonal offerings. For example, the following Special Ales and Lagers shall be produce during the specified time period:
Jan/Feb- Extra Special Bitter: This London Bitter Ale is deep brown with a tan head. English pale, crystal, and roasted malts with their English hop companions help to recreate this perennial British pub classic. A nice bitter and malty ale built to style.

Mar/Apr- Dopplebock: The original dark lager, first brewed by German monks as a liquid bread to drink during the Lent observance. A mix of light and dark German malts and hops, this lager emphasizes the quality malt combination with nice body but still retains its lager crispness. 6.8%ABV
May/Jun- Extra Pale Ale: This straw colored ale is brewed with the lightest pilsner malt to create a delicate grassy malt background for the equally delicate addition of German hops that create a spicy herbal balance between the two. Lighter that light, this ale is simple yet quite refined. 5.4%ABV
July/Aug- Dortmund Lager: This light straw colored lager is made solely of German pilsner malt and “noble” hops. This light lager is simple, balanced, and straightforward. Light malt and light hops create a delicate flavor with an extremely dry finish; a perfect refreshing summer lager. 4.8%ABV
Sep/Oct- Golden State Classic Ale: This is an original California beer style. First brewed commercially in Anaheim by __________ in ____, this beer style was revived after prohibition by Fritz Matag at Anchor Steam Brewery. Made from pale and crystal malts with domestic north-west hops, this ale is fermented with an originally strain of lager yeast that ferments at higher temperature than usual. The result of this fermentation is unique flavors that put this beer its own category, a true California native.

Nov/Dec- Holiday Olde Ale: This ale is big and bad, high in alcohol with a malt profile as complex as they get. This is an aggressively hoped celebration to the holiday season which is infused with coriander, cinnamon, anise star, and roast pumpkin. The result is a spicy nose with caramel, pumpkin bread, and alcohol notes ending in a sweet nutty aftertaste. 9.4%ABV.
In addition HBC plans on producing the following beers:
German Lager: This simple yet flavorful lager is deep-golden in color with a lacy white head made in Hellas tradition. It starts with a soft but assertive hop aroma, followed by a balanced malt and hop flavor. The highest quality German pilsner and crystal malts blend warmly into sweet doughy and caramel notes, creating a firm malt backbone for this light bodied lager. A combination of German and Czech “noble” hops brings a spicy herbal bitterness along with a smart clean flavor and aroma to this classic pale lager. Three months of lager ageing results in great integrity between the classic lager hops and the sweet German malts. This is a true beer classic. 5.2%ABV.
American Wheat: This hazy pale-gold colored ale is an unfiltered American style Wheat Ale with a light white head. With a citrusy epervescence, this thirst quenching ale is soft and classy. Made from over 70% malted wheat creates a delicate malt flavor in this ale. The light body and delicate flavor are matched with a light fruity flavored hop addition for slight bittering to balance the level of malt sweetness. The combination creates a crisp citrus mouth-feel along with warm biscuit notes that end with a clean hint of tartness. Classy this beer is essential to the endless summer, enjoy with a slice of lemon for extra refreshment. 4.8%ABV.
Orange Blossom Cream Ale: This ale is a classic American colonial Cream Ale with a California twist. Valencia orange blossoms and original domestic citrus hops create a floral bouquet in both aroma and flavor. Pale gold in color with a creamy white head, this pub ale is silky smooth in texture. Sweet pale malt and orange blossom honey create warm overtones that mix well with the delicate citrus character from the dried orange blossoms. Served on a nitrogen tap, this delicate ale finishes light and dainty on the tongue. Like a cream cycle for big kids, this ale is sweet and creamy while at the same time refreshing. 4.8%ABV
Seasonal Fruit Golden Ale: This light bodied seasonal special is a golden ale with a light white head. The palest ale malts are used to impart a light grainy backdrop for the featured fruit of the season. We boil this beer longer than usual in order to caramelize some of the malt sugars. The result is a corresponding sweetness to the malt flavor while retaining the single malt characteristic. The sweet malt nectar is complimented by a light domestic hop addition which creates a floral undercurrent to accentuate the fruit. After the beer is boiled it is steeped and conditioned with copious amounts of seasonal fruit, imparting both essence and flavor. This special is a refreshing light drinking experience to celebrate the season. 4.2%ABV

Imperial Stout: Darkest of the dark, our stout is opaque black and syrupy with a thick coffee colored head. Big is the one word to describe this beer; big malt, big hops, and big alcohol content. This stout is extensively aged due to huge amount and variation of toasted, roasted, and crystallized malts. The result is a complex mix of chocolate, roast coffee, and marshmallow which is tempered by a mix of earthy classic English hops. The great balance of strong but creamy flavors is accentuated by nitrogen tap creating a velvet-soft mouth feel to this lush and complex imperial stout. For fullest flavor drink a pint at room temperature.

The production of specialty beers will depend on local demand as expressed in customer tastes. They will be produced on a limited rotating basis, depending on the availability of the fermenters. In addition, our tap rooms will allow us to offer new products on our own taps to test the public’s response to these new products before offering them wholesale to other retailers.
